Customizable OCR Program

I have many scaed handwritten documents that are in a foreign language that needs to be converted to text. So I'm looking for an OCR program that I can declare what any given character should be, based on (a) sample(s) that I provide. I don't paying, considering short of this I would have to hire someone. I would definitely prefer a GUI.
