M2 SSD For OS and 2 x SSD for general usgage - can i create redundancy here for the os?

i was getting a little confused reading through the site, as i am new to raid etc, what i wanted to do was use a m2 ssd for the os and 2 ssd drives for NON os creation, ultimatley can i create a redundancy for the all drives? or even just the M2 SSD - any help would be apprecaited. thanks
