How do I encode a specific codec to a video file in Adobe Media Encoder?

I search high and low across the inteet and this questions is NOT answered in a straight forward way anywhere! I have an assignment where I have a short ProRes video file that I must encode with VP9, Dirac and a few other codecs. From what I understand adding a source file and changing the Presets doesn't actually encode the file.. how do I encode then? For example can anybody provide a clear step by step instructions for how to encode a video file with the VP9 codec? Thank you in advance!!!
