Switching from 1 SSD and 1 HDD to 2 SSD in RAID 0 and HDD

Current system: Windows 10, 1 SSD, 1 HDD, SATA set to AHCI mode in BIOS.

How to switch to booting from two new SSDs in RAID0 and HDD?

If I change the SATA mode to RAID in BIOS and configure 2 new SSDs to work in RAID0, will I be able to clone the OS from current SSD to the new RAID array and will my HDD be accessible after that operation?
